Doesn’t anyone know how to trim a sail?

Decent breeze, no high winds. This guys simply don't have enough sailing experience to handle that boat and made a lot of mistakes on that tack. They heeled to much because of miscalculating the tacking angle and could have easily corrected by easing the main and then adjusting angle to the wind and trim sails back. But they just didn't know what was going on or how to handle it. And they kept on losing control and making it worse afterwards. If they had another boat nearby they would have had an accident. And no, no risk of capsize at all, it was a lot more dangerous what happened after, drifting away with 0 control, it took them forever to ease the main for that angle. No reefs needed at all on those conditions, just look at how they sail before the fiasco and look at the other boats, they are all fine with no reefs.

high winds? this is at most 10knots. everyday afternoon it's 25knots in SF bay

Leave them alone, didn't harm anyone. They had too much sail up because they were racing. The likelylihood of capsizing n ta keelboat is minimal, unless the keel falls off!

A sailboat really won't capsize from wind alone. They are ballasted, and the only way to get them to roll over is a with a VERY big breaking wave.

Problem is first the main sail (sail behind the mast) should have been reefed with this
level of wind -- would have allowed for control, speed and safety -- and moved the center of wind effort
forward. Second immediate reason boat caught in irons (unable to move forward) is because the foresail
(sail in front of the mast) was not trimmed in, also caused the center of effort of the wind on the sails
to be too far back behind the center of resistance (effect of hull shape, keel etc...) in the water.

Racing in heavy winds when you are inexperienced is a recipe for humiliation if not disaster.
