Hi, I haven't sailed a lot of short keel boats, but had 3 charters. And also from my long keel experience I must say there's only a lot of prop walk if you're shy with the throttle. Very short but strong pushes on the throttle will immediately move the boat and not add to much speed.

Tip for prop walk!!! When you start to move backwards take the boat out of gear. The prop walk will stop and the boat will move backwards. When it slows engage gear enough to move then take out of gear to stop walk. It works!!! (The boat only walks in gear, not while moving through the water)

One little trick when it comes to prop walk, is to give lots of gas until the boat starts to move just a little, and then put in neutral. When the prop walk force is taken away, the rudder gets relatively more impact on the boats movement, and it starts to turn the way you want.

I had a two blades propeller for 6 years— on the chart of propellers— the folding two blades prop has the absolute WORST prop walk and maneuverability of all props... I know you all are on a budget— but IF + WHEN you get an opportunity to swap out to a 3-4 bladed Propeller— I would absolutely JUMP at this opportunity guys. You will enjoy your boat more and less stress in marinas and tight corners... . God bless you both and love the REAL life videos—. You guys are rocking it...
