VICTORIA AND RICO!!! SOME INFO ABOUT COMMERCIAL DISHWASHERS AS A CHOICE FOR THE NEW BERING 75!!! A commercial dishwasher can be an excellent addition to a kitchen set up, but remember you need to wipe off and rinse what you put in there before you run the cycle. Yes, they are very quick, but the primary tasks a commercial dishwasher performs is very effective high temp sanitizing as well as a powerful final wash/rinse. What you won’t find is the sort of multi direction spray set up in a heavy duty service domestic style machine. Definitely longer cycle times, but, you can shove food grime laden dish wear, sun baked sugar on glasses, and hardened food covered silverware and it’s designed to pre-soak and power rinse all that gunk off and some even pulverize it for easier disposal out the drain instead of pulling and emptying catch baskets for larger chunks of food yuckiness.

If you want the ultimate set up (which I have seen on a few vessels you have done tours of and is exactly how I set up my kitchen), have a nice large capacity heavy duty domestic dishwasher for the bulk stuff, and also install a small sized commercial unit for blasting out smaller loads and to keep up with rotating glassware during times of entertainment where folks are going through glassware turn overs regularly. That is by far the best set up to go with.
