@9:23 - Hey Bill.. When you are using a Japanese knife, you don't move it like a saw!! All you need it drag the knife towards in a constant motion.. That will cut the food/veggies as you wanted.. I have watched this thousand times on Japanese Knives channels and even on woodworking channels.. They don't push either wood or the food, they drag it towards them..

chayote does come in a prickly/thorny version in addition to the smoother (but bumpy) version you are used to. in jamaica we call them chocho.
