Been to the Keys 3 times now and could easily live in the Keys. A bit crazy but just a brilliant place!!! I had the same issue with cushions on my boat, so I made some waterproof covers out of ripstop nylon for them. They're not 100% waterproof as the seams may leak but pretty close and I can remove the foam if needed. Haven't tried them in anger yet but should be an improvement. I use them for sitting and sleeping on.

That is a lot of boat to handle single handed, much respect to you!

You are sitting way too far aft, make sure to move weight close to the mast. Will go much faster that way.
