Slocum normally sailed the Spray without touching the helm. Due to the length of the sail plan relative to the hull, and the long keel, the Spray was capable of self-steering (unlike faster modern craft), and he balanced it stably on any course relative to the wind by adjusting or reefing the sails and by lashing the helm fast. He sailed 2,000 miles (3,200 km) west across the Indian Ocean without once touching the helm

CSM fibreglass and epoxy is not a good idea…use woven glass only with epoxy….CSM is for polyester….not good for wood though.

I also have to ask. Why are you not insulating the outside walls? It just seems like the perfect time. Air conditioning in warm climates and heating in cold climates.

I would hire a naval engineer to assess the seaworthiness of that boat. Specifically whether or not your center of gravity is too high with all of that heavy materials on the topsides. IT looks to me like it might be top-heavy and prone to flip without more keel weight….Its hard to get a good look at the keel but it looked insignificant… I would be nervous about blue water trips
