I would rethink running the water maker on the modified sine wave inverter, AC motors do not like square/modified sine waves as they are very hard on them. whereas switching power supplies for computers and whatnot don't really care, they will run on crappy power all day long. A switching power supply for a computer and other items is cheaper and easier to get in a foreign country than an AC motor.

Great video, excellent equipment. I use Victron 95% of the time for my off grid systems. Only thing I'd suggest is a 2 pole breaker for each battery string to isolate each battery and protect the cables between the lynx buss and battery, apologies if it was mentioned already.

I would not use square wave on motors. They can not use the power in the square and tend to over heat.
