I know from experience, there are two sides to every story (or need). More importantly, not all water makers are the same. In my case, I have a 2nd hand Schenker Smart 60 water maker, I had it serviced once it arrived from SA.
It's been operating in my boat now for nearly two years with no problems.
The benefits are I'm not tied to shore - the system is 12 volts, runs on solar energy replacement from my batteries, and makes 60 liters an hour or fills my tanks 200 liters in 3 hr.s. The Schenker Smart 60 water maker, Energy Recovery System. Saves lots of battery power, It has the function to amplify the pressure supplied by the pump and recover the hydraulic energy back from the membranes. All replacement key parts are standard, not proprietary like on many water makers.
As to pickling, it's an easy 10-min job pickling and startup. I set up a custom permanent pickling tank that holds about 15 liters of a mix, its hose connects to the seawater inlet hose via a three-way valve. How I quickly picked the water maker.
Steps, 1) I turn on the pickling valve connected to the incoming seawater hose and not the seawater valve from the water maker. 2) I place the loose brine hose in the tank instead of overboard 3), Turn on the Schenker pump and 4) let the pickling mix circulate out to the water maker and back into the tank for 5 mins. For further pickling, reuse when needed. 5) power off and close the pickling valve to the pickling tank. Startup water making - 1) Remove the pickling mix by pumping the mix in the water maker back into the pickling tank for 1 min (note no pickling mix gets wasted reuse now a number of times) -. 2) run the water maker system as normal to make product water. Easy-peasy. SV. Skoiern IV

All good moves guys for cruising. Couldn’t agree more about keeping it simple. You can’t beat those warm temperatures . I hope you get the right people, not only skills but people that can chill in the downtimes. Have fun.

Minimal approach is good, especially since she has new running and standing rigging, solar panels. Yes, you don't need a water maker now - hand pumped 1 gallon per hour units exist and if you buy them used, less than a grand. Nice boat.
