One game you didn't mention which is really good (not surprising) is Sailwind, it is somewhat similar to Sea of Theives, but without any of the combat, much more realistic controls, and the map doesn't tell you where you are. Also there's an economy which you have to buy food, water, and ships. It is a really fun game I encurage anyone to check out.

Cmon is bad enough for you to recommend Assassin's Creed in a Top 5 Best Sailing Games, for you to name it TWICE, and to not include great game additions we had this year and before, such as Dredge or Sailwind.
