If it were me, I might convert one of the aft berths to a workshop/office if you are planning to live aboard. That also might give you an opportunity to increase the size of the midship head. I just found your channel, so I don't know what your plans are yet, but I will soon as I check out your videos 😉

As for the bathroom forward, I think you could enclose that shower without too much trouble. Sure it's a project, but it wouldn't be a substantial change to the layout of that very nice, large head. Maybe do two curved shower doors which slide into pockets on each side. I'd need to draw a picture to explain it better, but it could be a really fun project.
