Your narration is especially good too. And the filming , especially at sea takes us viewers with you! (Amazing drone sequences eg in rough weather).
Entering over the bar at Knysna S.Africa timing high water minus one hour during marginal weather is the same as my 18 years as ships pilot here in North Devon over our bar. Our ships were mainly cargo ships (carrying bulk dry cargos and Tankers which ONLY carry liquids such as oil) Enjoyed that episode too.

Also for drinking water have a UV filter at sink with a water spout for drinking.

If you are doing a 48v battery bank then get a 48v if 24v battery bank get a 24v. 12 volt is not efficient and 48v is most efficient.
