You might want to think about a kerosene stove/oven. Heavy enough to gimbel well with heavy pots cooking, Decent for bread. No worries about propane and MUCH more heat than alcohol. And once you lean the simple process of lighting – little or no annoying fumes. Kerosene also works for lamps, nav. lights, and heat if electric goes away.
Nice Galley layout – a bit better than my Westsail. Just make sure that your drawers are secured well enough so you can handle a knockdown with nothing ending up on the cabin sole or spread across the cabin.
Since our boats are similar size – and assuming your not a power lifter thing about a new slippery main mast track. Easier to reef when off the wind and still sailing, and faster back to he cockpit when done.
