What a pain and what a nightmare to be dealing with trying to get all these repairs done correctly and in a reasonable amount of time. I know it is all fixable but the problem is where and how long. This is your home. Does insurance cover hotel expenses if you have to stay somewhere for an extended period of time assuming you can even get the repairs started?

Head to trinidad or Grenada. Call ahead if theres any haulout and space in those marinas. It wouldnt be much load on the bulkhead if you take it easy on the passage to haulout. Other country/marina Which would solve the Visa issues in the meantime.
Survey documentation, use the video as evidence and send it to the insurance company of the other boat owner. They should cover the expenses of haulout and repairs.

Sorry to see this happening. Obviously not your fault but always such a hassle and pain in the back side. If that was a car it's likely the insurance company would just writen it off
