Straight rebarsfrom side to side, held together with wire are easier to center and wold be just if not stronger. But you are right aliens will find your foundation.

You can buy blocks with a notch in the bottom to lay horizontal rebar and pour the wall solid.

And as far as bending the rebar why don't you bury a steel post in the ground with a lots of concrete and a hole about waist high. it'll be easier than using the truck.

Matt please tell me those u-bolts are not the only thing holding that hitch onto the bumper. If it is, you're just bound to have an accident and lose whatever you're towing… Im serious, you need a real receiver on the truck. That bumper's not built to carry that much weight either. Personal experience.

As wet as that cement went in, it should pretty much self level. Plus its probably too late, but if you have to bend rebar again you can just use a 2 foot or so length of steel pipe and you will get a much sharper bend.
