Sailing Uma that went north used a small wood stove to supply heat and dry things out .

7:25 You are right to replace the rotten (ply)wood. The mold is not good for your health.
8:53 The problem is that you still have humidity in the air and still have cold points (which are just a little improvement from having cold surfaces) which cause condensation. The electric heater that you mentioned earlier heats and moves the air only in the center of your boat. The water vapour propagates to the sides and edges where the air does not move. Consider installing a diesel heating that will have conduits along the boat's boards, this moves the air better. At least it served me well here in Sweden.

Not sure where you plan to go next but Bushpoint and Cadoha are both good channels for Ireland and England sailing respectively.

I'm surprised you guys didn't sail to Greece or , even, the Canary Islands for the winter. Cruising should be a warm weather activity.
