I had similar issues with our Outremer 45 (2004) with the same anchour and a anchour hook. My solution was
1 get a spade anchor, which has never let us down.
2 and this was more important get rid of chain hook.
3 make a pruusic loop from 3/8 dyneema which can go around chain 3 times
4 make a soft shackle from same size dyneema
5 loops in the end of your bridles.
With that done set your anchour and wrap loop around chain between roller and windlass ,then attached the bridles to the loop with soft shackle and deploy and all things being equal you are done .
The loop has never slipped in 11 years and the soft shackle has never come apart. The big advantage is that the connection runs over the roller with out issue .

One way to force an anchor to dig in that likes to fall on it's side is: in 5m water depth, let out 4 m of chain, reverse at 0.5-1knot & then let out the rest without stopping in between.
That way the anchor gets pulled into "dig in direction" like a plow BEFORE touchdown. Don't go too fast or stop letting out chain or you'll rip it out.
Hope that helps in the mean time.

As a charter yacht skipper in the Whitsundays, I think its under sized chain, we upgraded all of our seawinds 1160s and 1260s up to 10mm chain and rocna anchors never have issues! And personally even on my own 35ft mono 6tonnes I have 10mm chain with a delta which has never dragged. Big advocate for heavier chain

Love watching your adventures and the new boat looks very nice. Thought id past on my anchoring experience, i have a 41" flybridge game fishing boat which we do a lot of cruising with and our anchor is a CQR 60lb with 8mm short link chain. We anchor in a lot of different bottom conditions and exposure to wind, current and waves etc and have never had a drag problem. Our boat is approx 14000 kg. The only issue i have ever had is in a fresh water lake (Myall Lake) which had 1 to 2m of thick stringy weed. Would highly recommend the anchor and to make it even more bullet proof 10mm chain would be optimal. Cheers from Oz and good luck with sorting out your pick problems.

Diving on your anchor every time will tell you a lot about how it sets as for chain 8mm seems light I would always go oversize on both chain 10mm and weight of anchor.

WE HAVE A 36 KG EXEL WITH 13 MM CHAIN ON A LAGOON 450. WE CHANGED TO THE EXEL. FROM THE STANDARD ANCHOR THAT CAME WITH THE BOAT, WHICH USED TO DRAG . IT WAS A SMALLER ANCHOR AND DIDNT REALLY FEEL LIKE IT HOOKED UP . THE EXEL STOPS THE BOAT VERY SHARPLY NOW AND HAS NEVER DRAGGED . IT IS NOT FUSSY HOW WE SET IT AND EVEN HOOKS UP WITH VERY LITTLE CHAIN. IT MAY BE POSSIBLE THAT YOUR ANCHOR IS SLIGHTLY BENT, THIS HAS HAPPENED TO ME BEFORE EVEN THOUGH ANCHOR LOOKED FINE. 8 MM CHAIN ALSO SEEMS LIGHT.
