That is my favorit pizza flour. Poolish first then proof for at least 24h, preferably 36h. San Marzano, fior di latte some parm, basil, 430c for 90s and you have a PERFECT pizza.

Beautifull chef ! Nice pizza ! I m not an expert ( serving food – 3000 people everyday till 2008 ) , but you did a really good job ! I never do something without to make a try before ! Rationol ofen make also a great job , you have just to bake 2 times , with and wirhout Mozzarella……it means you can prepare a large quantity and timing perfectly the serving , backing on the right Time ❤

Very good instructions. An additional note from me: You can also put the dough in the fridge overnight. And if you make it for fewer people and want pizza every day, you can make the dough a week in advance.
25 pizzas, a good day by the ovens. So got 4 right and 1 bit overdone. Not bad odds for a first timer Essie.
