For people wary of the syrup on the eggs...pro tip. Plate the eggs, then the pancakes, then the syrup. The pancakes provide a buffer. All still in the same bite.

I love your breakfasts and they give me inspiration. The pancake one reminded me of a breakfast meeting I had in Hong Kong in 1977. The client's rep (Aussie) was a fan of American breakfasts and I was a fan of the Full-English breakfast. Being young and foolish, we decided to combine the two themes. The hotel I was staying in was obliging. So we had a stack of pancakes with maple syrup and butter, English-style bacon and sausages surrounding the stack, and a couple of runny fried eggs on top. When we cut into the eggs, the yolk ran down the sides of the stack in a beautiful, golden cascade. It was very good, but perhaps a bit too filling.
