That's a great looking homebuilt electric canal boat but you shouldn't take it in the open ocean. It will break up and you will die

I would triple up on those electric motors! Try to pump that knot count up to around 10-15 cruising speed. Cross Atlantic travel at 7 knots will take you effing forever! I'll bet the Santa Maria could do over 10 knots cruising in good winds! Looks pretty cool tho. Gotta start somewhere! Keep pushing my guy! Interesting. We used the same 6kW Epropulsion Navy 6 (2024 model) to do 1100 miles of the Great Loop in the USA on our 17 foot sailboat. We only had 600 watts of CIGS flexible solar though and our speeds were lower because of boat length. The Montgomery 17 has a 600 pound lead keel and mast so is probably nearly as heavy as your boat lol…or at least half the weight. We are thinking of making a solar river/lake cruiser after we finish the loop on this boat.

This boat looks like a makeshift widebeam narrow boat. The British are absolutely packed with them. Lookup my favorite youtuber Cruising the Cut (David). I feel like you could get a gutted or base model widebeam and you could just upfit it to this.

If you wanted to go into big water id suggest outriggers, but i literally clicked on the video bc i thought someone customized a narrow boat. Itd save you a bunch of work. Can get them for $10k used to an average $60k all the way up to a $100k for a fully manufactured custom ordered boat. Just get the shell for cheap and outfit all the stuff on helios onto the widebeam. They do traditionally steer from an outside deck on the rear, but if you could change that.

Also i know you want to be completely self sufficient, but id suggest a multi fuel generator. Get an old hit or miss or something similar. SUPER simple and can work off gas, diesel, frying grease, old motor oil, whatever you want. A sail is nice, but if you need to get somewhere or fight a storm having actual generation can make a big difference. Can get a decent one for around $1k in the states, very efficient too.
