It seems that bad luck follows some around more than others. i too have had a srting of 'bad luck' however, i am getting rid of it. Why did you not work from he dingy?
That is why, skid proof deck shoes were invented. Wear them when working on a vessel. You never see sailing crews working bare foot!

When you two first started I think princess was very skeptical and scared understandable but now if it came down to it I think she could sail that bigass yacht and she is cute LOL. Most importantly she's stuck with you brother And a lot wiser she is for doing that. I'm slightly surprised that you did not remove the anchor from the chain, then deal with them as two separate problems, you could then re-attach the anchor once you had sorted the knot in the chain.
But that's easy for me to say, sat here in my arm chair rather than being you, under difficult circumstances. You made it work, good job.

Oh Jamie. Hope your feet/toe is getting better. A swivel at the anchor will prevent the most mess while float/swear around the anchor. A second anchor at stern side will prevent you to float around. Thats what i would do in this situation (calm sea but light wind and maybe changing current). All the best to you! You couple are very funny and always calm and professional! Best to you!

Would buoying the chain/anchor have made any difference? or would it have actually hurt?

Oh, and invest on a hooker / houka rig – an (Briggs and Stratton) gasoline engine hooked to a air compressor that can supply air down to you as a forced feed.

What caused the entanglement? It looks like an anchor has just been dumped in without a gradual feed out of chain, but I don't think you would deploy like that….
