I have a 15-meter ex-BOC single-handed masthead cutter built in France. When I first got it, there was no windless. Like you, It was a lot of work to pull in the chain and finally the anchor. I thought I had a good solution for a time. One day I was in a nice protected bay, or I thought, and a southerly wind came straight into the mouth of a small bay.
I found myself dragging on a lee shore. I used a hook and long sheet and ran the line back to my cockpit primary winch and winched in 15 meters and reset the hook and line quickly, having to reset the chain hook a number of times till the ground tackle was up. Your boat is lighter and smaller than mine, so this could be a good solution to what you're doing now with no control if you get hit by a gust.
In the end, I installed a windless. One day you may find, as I did later that same day – I re-anchored again, and my boat dragged. The problem was there was shale under a thin layer of mud, and no Anchor could dig in enough to hold the boat in a strong wind – Since I was solo with a group of other boats this time I need to help a second time to haul up the anchor as I was worn out. Even using a primary winch and running back and forth resetting the line and chain hook… I was In trouble. I need someone to come on board to motor my boat forward to recover the ground tackle.
I’ve been dragging in my 28 and it’s making me nervous to go out and sleep. This was really helpful, I’m going to change my set up. Thanks mate!
By all accounts you should have the 10mm and 12mm the other way around for most anchoring in reasonable depth.

Nice idea to have a carabiner ready to hold the chain during rests. I usually just put the chain around the cleat but that's quite messy! ~~~~_/) ~~~~
Now that you have a hero 7 you can use the 'hyperlapse' for your "fast forward" scenes. It works very well. For sailing, riding and walking as well.
Cheap pair of gloves makes pulling up the anchor chain much easier.

I bought a cheap D type copy. It was worse than useless.
Dragged on sand. I later tried pulling it across mud, it just turned onto its back. I think the geometry is important, but copies may have got it wrong.
