Looking good. Tulula is precious and getting so big. Just cut a small 3/4 ' strip of the same material, like a molding, and just attach it to the bottom. It will look fine.
About your Formica that doesn't quite fit: I would Just find a strip of wood that is the same that is already on the boat. Maybe some that you already took out for the repairs, cut it took length and make it tall enough to cover the imperfection and it would look like it has always been there. That's why houses have baseboards between the wall and floor.

It's been a lot of work, but I guess you'd have it no other way! Yosh is a workaholic and Bonita has so much stamina, I reckon you'd not feel the yacht was properly yours without you both working, and working hard, on it .. And Tallulah, so beautiful. Good looking boat. Find a couple of wood strips around the yard and use them as mouldings for the formica that did not fit well. Boatyards are filled with treasures people leave when they make repairs.
Yo, I think you should make your mind up that every single time you walk down into the saloon, you should look at the shonky cut and fit on the formica and feel really really bad .

Yosh you only notice your own mistakes. Put an edge on it, a cornice , a thin stip of timber along the bottom, will also make it look finished

just run a bead of white silicone in the gap and smooth with a spatula. it's the colour variation that makes the gap obvious. tape along the bottom edge to get it neat and match the join
What if you put some trim molding along the edge of the Formica?

Put a picture or some books over the Formica gap – all done!
Put in small peace of wood trim around the white and it will fix the mistake and look great.. here in America we call the trim quarter round
