Lots of sailing footage- yay!
For a jammed winch, just apply a distel prusik to the tight side of the jammed line to pull somewhat towards that winch. Tie in that closed prusik to a non-slip knot of your choice on the end of some other line. Use another winch to pull the new line tight against the sail, to create slack in the jammed winch.
I'd guess that's one of the few ways you'd be able to loosen a hawser on a berthed ship, to fasten it to a [double] bit if it's been winched in with a spool or capstan.
You two have very good attitudes.

I've recently started offshore sailing (out of Sint Maarten as it turns out) and the most common question I get from non sailors is what goes through your head on departure day. Your comment 'predictably excited, sensibly nervous' is absolutely the best description of the feeling I've ever heard and I'm going to steal it!

Congrats!!! Would you ever consider to a bit of a tutorial on the pressure canned meals you created? Pressure canning seems a bit of a mystery to me, but it’s such a valuable skill!
Vanlifer tip: you can clean dishes with distilled white vinegar, just fill up a lil spray bottle. Does a pretty good job breaking down grease/oil and you don’t have to use any water. 🤙
