On the subject of range – I think your range limiting factor is the human factor, especially with children. You will likely find that fresh food and vegetables is the immediate practical limit. If you are having a water maker, then 1200 litres of tankage is probably excessive (That’s 1.2 tons btw).

On the finance question, (I am by no means qualified so only personal experience). Go to an online bank such as Starling. No conversation fees to use GBP they just give you the current exchange rate, job done. I've done this myself travelling Europe on a motorbike and worked fine so don't see why it would work on the boat (I will be using it on our boat). The caveat is, I assume, you have a registered UK addresses but you can get virtual home addresses that banks will accept very easily. Hope this helps.

You really don’t need a water maker for the Mediterranean. Almost more of a pain to have to keep running it for us since we commissioned ours again. We only needed it in Turkey over winter. Everywhere else you can get water easily and low cost or free
Banking is easy online with your current back account. If heading to the med add a euro account. In Turkey we used Revolute and transferred from our Irish bank account to that as the Revolute exchange rates to TL was far better. But it’s no problem and a small thing to deal with
