Wharam have windvane designs to some of their designs and I think Hanne have some suggestions. A windvane I think is a good fit for you no electric consumption there and with a little learning and advise from wharam mybe you can build it yourself.
Do you not regret buying Steel Melody. You would be sailing by now.
make sure you match your outboards so you dontt have to carry twice the spare parts. even a couple years difference can matter.
good to know about the Mr Boat epoxy as im always put off splashing out on west marine epoxy. i think the boat is looking great

You definitely will need windvane steering. Especially if you are single/short-handed. I have a Neptune which has proven itself very good even dead downwind. Of course like all windvane systems if the wind is blow about 8kts it doesn't work. I dont have an electric system so if there's too little wind I hand-steer. If theres no wind at all i just bob around and 0:02 put the kettle on 😅

Regardless of the maths, the result will really be YOUR boat. As someone who bought an old bus (22 years old when I bought it, had been retired as a service vehicle, owned by a tug of war team, then sold on to someone else who stripped it out and then gave up on converting it), converted it into a mobile home, then drove it to Kathmandy and back, that's a big good feeling.

Personally I think you've done very well so far. I have no idea how much it all should be, but £10K seems very well done to me for the boat you have, even now. That paintjob makes me smile every time I see it, it's briliant.

I know that dynema rope is fashionable currently but I am aware that wet, it’s considerably weaker in tension. It’s also known to be affected by impregnation with salt crystals left as seawater dries. These chafe the fibre’s severing them individually.
Obviously its resistance to uv is questionable like many of its cousins. I know this as I used to be involved in making super high pressure hydraulic hoses for subsea use. These phenomenon came to light in our use of this fine polymeric yarn.
