As someone who bought a boat in the UK and went across the channel to France, this is something I know a little bit about. The main thing I learned was the French don't give a fuck about most things. Collect as much documentation as you can. Get your ICC, with a CEVNI addition (for the French waterways) and set sail. I spent 18 months on the French waterways and the French/Mediterranean coast. I was never asked to produce any documentation. Not even once. The French are very laid-back. Very friendly and helpful. Do it.
If you belong to the RYA you can use their version of a bill of sale. Both are just templates and require the important information. The red ensign can be flown during daylight hours by any loving subject of the UK monarch and even if you don't love them, it lets officials know you're from Blightey. Thanks for the other admin stuff.

Our boat is registered and day before crossing to France we had to submit a Pleasure Craft report to the UK Border Force just to let them know we are leaving.

A must do is Ile De Brehat, west of St Malo. A beautiful island with nice anchorages. You can also sail upriver there to Lezardieux. Very nice.

When you go from Cherberg to another port do you have to tell the UK?
Can I ask why you’re going to Cherbourg and then cruising the Channel Islands because you’re just using up your EU days it’s much easier to book into France electronically it then gives you more entry and exit options rather than being restricted to ferry ports
