when you are putting huge torsional forces on the wrench you NEED to be wearing eye protection. If something shatters bad injuries can happen. Even if you don't have actual safety glasses. Basic sunglasses are next best option you should already own.
Why so many through hulls? I thought with a sea chest you wouldn't need so many.
So you need new balls then? (Sorry, couldn't resist that one). The practical skills the kids will learn will be for life. I was, electricians/plumbers/fitters/decorators mate for my Dear-Old-Dad and I learnt so much.

You could put a little heat on them. The heat will bake the sealant so that it lets go of the fitting. Just a thought.
