In case no one has answered the question on the name of the fish, I know them as Dolphin(not as in Porpoise) from the 70's fishing offshore of Cape Hatteras however these days they are commonly called Mahi Mahi.

Guys, that fish you keep catching is called Mahi-Mahi. Also known as Dolphin, or Dorado in Spanish.It's a priced catch. Great sportsfishing species, and delicious. Try cut it into fillets, or medallions and fry it in oil with some garlic. A touch of pepper, salt to taste, cook both sides till lightly brown, enjoy.
