The slower hardeners result in a stronger cured epoxy, so use 206 or even 209 when you can. Where is the peel ply??? On a job that size, be prepared to wash and scrub off the amine blush and then sand between layers, which I do even when using peel ply. You just won't be able to go fast enough to do it in one go, although a chemical bond is always preferred over mechanical there will be no avoiding the latter.
Fire hazard: I haven't seen fire extinguishers in the barn… maybe place a few in strategic places?

I think you will need more epoxy, I have used 30kg of epoxy on my Setka 5m build and just ordered 30kg more check my blog at the same place as my name

I used to work at a chemical plant 50 years ago.
We took deliveries of drums of solidified tree sap just that size.
They arrived on 2 tray trucks driven by guys 67 and 65 years old.
There must have been about 50 upright drums to a truck.
Each guy unloaded his drums by a quick, easy looking tilt of the 220kg drum,
and then rolling the drum on its edge, one handed, along the truck bed and into the loading bay.
They moved about 11 tonnes each in this way in not much more than an hour and a half.
After 6 months I had arms like tree trunks.
Ironically the place was called Hercules Chemicals.
Try Mirka Abranet Ace. Very good for sanding epoxy
I've used infra-red lights under the hull in the past, they warm the hull really well so that you'll be putting the epoxy onto a warm surface. Low cost, effective and no condensation.

I just love watching vera grow like a weed.
There is a Estonian heater you should read about it veltron heaters they burn all and you don't need exhaust. Not cheap but very useful in these type big areas.
As to dehumidifyers, I suggest not to use these boxes with chemicals. The heat pump / airco like units work much better and they allow you to really control the humidity.
